Starter choose one dish from

Raw ham “Fiocchetto di cantina” with flowery cheese and home-made vegetable gardene

Fassona chopped meat, poached egg, mayonnaise and essence of green asparagus and crispy parmesan

Norwegian salmon tartare with mango essence, watercress and black olives


First course choose one dish from

Ravioloni stuffed with turnip greens creamed with pepper and roman pecorino cheese

Egg pasta “grattini” in broth with bovine tail ragout and stracciatella cheese sauce

Spaghettone “Monograno Felicetti” with garlic, oil, chilli pepper and cantabrian anchovies


Secound course choose one dish from

Chickpeas pralines and friarelli on tomato sauce and basil, caramelized red onion and salted pistachios

Lamb loin wrapped in wild herbs with blueberry essence, shitake mushrooms and red potato crisps

Low temperature anglerfish medallion with vegetables caponata, black olives and Pantelleria capers


Dessert choose one from

Savarin with dark chocolate and bon bon of hazelnuts, wafer and macaroon foam

Triptych of tiramisù spheres with home-made savoiardi biscuits

Home made sorbet
